Medu Vada
Serves 6-12 vadas
Ingredients 1 cup: Urad dal 1 big piece: Ginger (or 2 tbsp of ginger paste)
3-4: Green chilli's
1/2 tsp: Pepper corns (or 1/2 tbsp of pepper-powder)
1 tsp: Hing A few: Curry leaves (atleast 15leaves medium)
Oil for deep frying (only vegetable oil)
Salt to taste Redchilli powder (1/4 tbsp)
(optional) 1/2 medium chopped onion (very finely chopped)
Method Soak the urad dal in water for an hour and 1/2. Grind to a thick paste all the ingredients without oil. (do not finely grind)
Refrigerate the batter for 2 hours.
mix the chopped onions with the paste
Heat oil in deep pan for deep frying on full . Sim the flame
Shape into Vadas and deep fry on both sides till brown.keep checking if the inside is raw by poking with a fork
Serve hot.
Goes well with ketchup and pickles
