  • 1 teaspoon dried basil
  • 1 teaspoon of salt and pepper (each)

In a large cooking pot, add finely chopped onion, garlic and celery along with your 3 vine tomatoes or 8 cherry tomatoes (cut up into small chunks). Let this simmer with 2 tablespoons of olive oil until the onion is soft. After the onions are soft, add the can of tomatoes and the salt and pepper. Cover with lid and let simmer on low heat for 30 minutes. Add water to make it your desired consistency and mix.

If you want a smooth, creamy soup you can now run it through a blender or food processer. You can also exchange the water for milk to make it creamier, but make sure that it is skim milk. After you’ve reached your desired consistency, serve soup into serving bowls and add dried basil leaves in the center for a beautiful and delicious touch.

The more of this soup you make, the less often you will need to cook. If you purchase freezable Tupperware, and put one serving into each bowl, you can have a quick lunch or even dinner. Just microwave to your desired temperature and enjoy!
