Indian cooking is so rich in spices because the spices used not only are fo seasoning and flvouring the food, but also have medicinal properties as well as preservative properties.The curry in most continents are served with a rice or a carbohydrate of some sort like a chapatti or a naan, to allow the contrast of the flavours with some kind of plain flavours. The culture and taste of each food is so different it makes it seem like many countries with one. The actual ingredienst used in regional dishes are also very different depending on which subcontinent you are in. If you are in the northern region of India, the foods you will probably enjoy are rices and chapattis, which are round flour tortilla like substances. This is because this is what grew in these regions many years ago. And even though now all foods are available probably all year round, the traditional foods are still ingrained within most people
